Obtained exclusively from Arbequina olives. After being picked by hand directly from the tree, olives are washed with water, drained using grids, transported in crates and ground the very same day of the harvest for their subsequent pressing in baskets.

The richest, finest and most aromatic fraction of olive oil is the one which is obtained from the first juice coming out of the press without extra pressure: the juice that oozes out through the baskets and olives due only to its own weight.
