Simply slice the potatoes and leave them to soak in ice water for 10 minutes to remove the excess starch. After patting them dry with kitchen paper, arrange them on a baking tray and brush with extra-virgin olive oil.
Sprinkle with salt, pepper and your favourite herbs and spices and bake for about 20 minutes at 210 ºC (nonfan), before turning the temperature up to 260 ºC for the final 5 minutes until they’re golden brown and deliciously crispy.
